Pumpkin Pistachios Tawa Kebab

To make: 4 Kebabs.

Ingredients:
150 gm orange yellow pumpkin (bhopla or
kumbhda), blanched and mashed
20 gm pistachios (pista), blanched
1 ts finely chopped ginger (adrak)
3 green chillies, finely chopped
¾ tsp turmeric (haldi) powder
¾ tsp garam masala powder
30 gm cottage cheese (paneer), grated
30 gm boiled and mashed potato
1 tsp finely chopped fresh coriander leaves
2 tsp finely chopped raisins (kishmish)
½ tsp salt
corn flour for dusting
oil for sauteing and grilling

Method:
01. Saute in minimal oil ginger, green chillies, turmeric powder and garam masala powder till it produces spicy aroma. Remove from fire.
02. Mix the sauted mixture with all the other ingredients except for corn flour, thoroughly to a homogenous mixture. Make 4 equal parts of the mixture.
03. Turn each portion of the mixture into a flat round of about ½ " thick.
04. Grill the flat rounds of the mixture on a medium hot skillet (small round frying pan or tawa).
05. Serve hot with any chutney or sauce.

Kolmi Na Kebab
(A Parsee Delicacy)

 


 

To make: 4 Servings.
Ingredients:
250 gm boneless skinned fish fillets, washed thoroughly
20 medium sized prawns (kolmi as known in Mumbai), shelled, cleaned, de-vained and slit into 2 pieces
1” ginger (adrak), chopped finely
4 green chillies, finely chopped
1 large onion, finely chopped
2 tbsp finely chopped coriander leaves
3 tsp red chilli powder
½ tsp turmeric (haldi) powder
1 tbsp dhansak masala
1 ½ tsp salt
2 cups breadcrumbs
2 eggs, well beaten, individually
1 tsp flour (maida)
oil for frying
For Dhansak Masala:
2 whole red chillies, broken
3 black pepper corns (sabut kali mirch)
2 cloves (laung)
2 big cardamoms (kali ilaichi)
½ tbsp cumin seeds (jeera)
1 tbsp coriander seeds (sukha dhania)
1” stick cinnamon (dalchini), broken
Method:
01. For dhansak masala, grind all the ingredients together, in the grinder to a fine powder. Store in an airtight jar.
02. Mince the fish. Add ginger, green chillies, onion and coriander and mix well with the minced fish.
03. Add chilly powder, turmeric powder, dhansak masala, and 1 tsp salt to the minced fish mixture and mix well. Form 24 lime sized balls of the mixture.
04. Insert one slit piece of prawn in the ball and reshape it again into a ball.
05. Make a batter of one egg, flour and
½ tsp salt.
06. Insert the ball into this egg batter and roll it on the breadcrumbs to have it coated from all the sides.
07. Heat oil and fry all the balls till golden brown. Remove on the kitchen paper to soak the extra oil.
08. Dip the fried ball into the second beaten egg and fry again in the hot oil. Remove on the kitchen paper to soak the extra oil.
09. Serve hot with any spicy chutney or the chilli tomato sauce. l
